When I’m out running errands or meeting friends for lunch, Panera is often the lunch destination we choose and their broccoli cheese soup is one of my favorite things to order.
Intent on enjoying this restaurant classic at home, I set out to recreate my own copycat recipe for cheesy broccoli soup for my family. The original version of this recipe served seven.
I’ve scaled down the ingredients in my original broccoli cheese soup recipe and created this wonderful, single serving broccoli cheddar soup.
Broccoli Cheese Soup
This soup is thick and rich and absolutely perfect. Here are the ingredients you will need:
- broccoli florets
- olive oil
- chopped onions
- chicken broth
- heavy cream (you may swap whole milk for the cream if desired)
- cheddar cheese
- chili powder

The rich, thick, super-creamy broth is comforting and filling with thick chunks of broccoli in almost every spoonful. I like to enjoy this soup with a thick crusty piece of french bread.
Make It Vegetarian!
This soup can be easily become a vegetarian soup by using vegetable broth instead of chicken broth. I think you will find that the vegetable broth enhances the flavor of the broccoli.
Make It Gluten Free!
Make this a gluten free broccoli cheese soup by eliminating the flour and using cornstarch or arrowroot instead. Or, you can leave the flour out altogether.
